I haven't.  But, now that you've brought it up, I think I'll watch all 15 episodes.  That sounds like a really neat project.

Can't believe no one has watched "Project Binky" on youtube. Completely rebuilding a mini like you wouldnt believe. These are two blokes from Shropshire reimagining the mini. A mature vidio without the loud music. Dry british humor. This is the best video on youtube. Unbelievable fabrication.    https://www.youtube.com/watch?v=7hCPODjJO7s (https://www.youtube.com/watch?v=7hCPODjJO7s)

You're not alone in thoroughly enjoying Project Binky. Those two are one heck of a team and excellent fabricators. It's been years in the making so far and I'll be sad when they wrap it up, but it'll be worth it. I follow a few others as well over on YouTube. Mostly Classic Mini DIY, StevestonMotorCo, Mighty Car Mods, and a few others like Davejaguar66, Total Car Reviews, and Matt Green. I've already learned a lot just from watching videos! I'm soon to be putting the skills to use with some maintenance that's due.
