Someone in Face Book highly recommends Pierce Automotive in San Antonio. I'll paste their comment below, should anyone be interested. They didn't list a phone number or address but it shouldn't be hard to locate.

The last time my Minis ran this well was after going through the rolling road (dyno) at Minispeed UK. Two old men in TX tuned these cars to run just as well and idle correctly with just their ears and test drives. Its astounding. Anyone in TX in the San Antonio area I highly recommend these guys at Pierce Automotive.
